Mexican Hash Chicken Salad

Makes: 1 serving
Ingredients:
-1 cup Cascadian Farm frozen root vegetable hashbrowns
-1/2 cup sliced cherry tomatoes
-1 grilled chicken breast
-salsa
-Trader Joes cashew fiesta cheese dip
-1/2 an avocado
-spring mixed greens
Directions:
1. Start cooking the hashbrowns on medium high heat by spraying a pan with non-stick cooking spray. Cover and cook the hashbrowns flipping half way through.
2. Place a layer of spring greens on a plate, slide hashbrowns on top of greens, top with grilled chicken, cherry tomatoes, salsa, avocado, and cashew cheese dip.
