This cereal is a great option for breakfast as well as an afternoon or late night snack. It contains healthy fats in the form of omega-3s from flax and chia seeds as well as healthy saturated fat from coconut flakes. You can customize this recipe to your liking by adjusting the ratios of the different ingredients and by choosing your favorite fruit to add to the "cereal" portion. My current favorite fruit to add is frozen blueberries. Blueberries are high in antioxidants, boost brain health, alleviate inflammation, support digestion, and promote heart health. Studies have even shown that drinking wild blueberry juice daily for 12 weeks was able to improve the memory of older adults.

Serves: 1


Ingredients:

1/2 cup unsweetened vanilla almond milk

1 cup of fruit of choice, fresh or frozen, (blueberries, apples, pears, strawberries, raspberries, blackberries)

1 tbsp finely shredded coconut

1/2 tsp flax seeds

1/2 tsp chia seeds

sprinkle of cinnamon

sprinkle of stevia


Instructions:

1. Place all ingredients into a glass bowl, stir, and enjoy!
