Paleo Chocolate Chip Cookies

Makes: 22 Cookies
Ingredients:
3/4 salted creamy almond butter (I used Trader Joe's)
1/2 organic coconut sugar
2 tbsp coconut oil, melted and cooled
2 eggs
1/4 cup coconut flour
1/2 tsp baking soda
1/4 tsp salt
1 bar 100% dark chocolate roughly chopped
Instructions:
1. Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
2. In a large bowl combine almond butter, coconut sugar, and coconut oil. Stir until a dough comes together.
3. Then add eggs one at a time until the batter becomes uniform in color and texture.
4. Mix the dry ingredients together; coconut flour, baking soda, and salt.
5. Stir in chocolate chunks.
6. Use a tablespoon measure to form little balls and place on the cookie sheet, 1 inch apart from each other.
7. Bake for 8-10 minutes or until the cookies turn slightly golden brown around the edges. Allow them to cool for 5 minutes on the cookie sheet. Then transfer to a wire rack to finish cooling.
