Makes: 8 bagels


Ingredients:

1 1/4 cup almond meal (Trader Joe's)

1/4 cup flaxmeal (Trader Joe's)

1/4 cup coconut flour

1 tsp baking soda

1/4 tsp Himalayan pink salt

5 large eggs

2 tbsp apple cider vinegar

Everything But the Bagel Seasoning (Trader Joe's)


Instructions:

1. Preheat oven to 350 degrees F. Grease a silicon donut pan with avocado oil spray.

2. In a large bowl combine, almond meal, flaxmeal, coconut flour, baking soda, and salt. In a separate bowl combine eggs and apple cider vinegar and whisk until combined.

3. Pour egg mixture into dry ingredients and stir until a uniform dough forms.

4. Using a spoon, spoon batter into donut pan mold. Sprinkle bagel seasoning on top of each donut.

5. Bake for 20 to 25 minutes or until a knife inserted into center comes out clean. Let cool for an hour.


I recommend slicing and toasting the bagel and accompanying it with an avocado spread or vegan cream cheese!
