Whole-30 Creamy Tomato Basil Chicken Soup

Ingredients:
-1/2 tsp olive oil
-1 pound chicken cut into chunks
-salt and pepper
-1/2 tsp red pepper flakes
-1 tsp garlic powder
-1 tsp onion powder
-1 tsp Italian seasoning blend
-1 cup bone broth
-2 medium zucchini chopped
-2 cans of fire roasted tomatoes
-1 cup light canned coconut milk
-2 cups torn basil leafs
Instructions:
1. Heat olive oil in a large pan over medium high heat. Add chicken to the pan along with salt, pepper, red pepper flakes, garlic powder, onion powder, and Italian seasoning.
2. Meanwhile blend one can of fire roasted tomatoes.
3. Cook chicken until no longer opaque. Add bone broth, blended tomatoes, whole tomatoes, and shopped zucchini.
4. Bring to a boil and then reduce to a simmer. Simmer for 20 minutes.
5. Remove soup from heat, add coconut milk and torn basil leafs.
